The acceleration of food trends

NYT - new flavors and foods are coming at us more quickly:

...[F]lavors are moving faster than ever from ... upscale kitchens to chain restaurants. New dishes or ingredients are publicized within a year of showing up on chefs' menus ... and it takes no more than 18 months after that for them to go mainstream.

This may also help explain the paradox of choice, as more and more flavors hit the store shelves.
